he Bodega has an older section,
made up by the centuries old underground ‘calados’
or caves carved out of the bedrock at a depth of 10 metres,
where nature ensures that temperature and humidity levels
remain constant throughout the year; and a series of modern
climate-controlled premises in which all the wine-making,
aging and bottling processes are currently carried out in
conditions of the utmost comfort and cleanliness.
For the fermentation process we use small (8,000 to 25,000
litre) stainless steel vats with automatic temperature control
that enable us to process the different varieties separately
and ensure a better selection according to plot, quality and
variety, etc.
The bodega’s collection of casks encompasses 2,500
units made from 50% American oak and 50% French oak from different
forests, manufactured by the best coopers in Bordeaux and
Burgundy.
Every year we replace a high percentage of our casks, purchasing
French or American oak depending on which type best suits
the characteristics of each harvest and the wine we hope to
produce.
In 2004 the Bodega gained the ISO 9001-2000 and the BRC Global
Standard Food certificates which ensure the Quality Management
System in all processes and products.
